Hello and Happy New Year! Hard to believe we are in 2014, and it’s even harder for me to believe that my wedding is 5 months away (eek!). After a wonderful holiday season with lots of delicious goodies, I was looking to make something without any sugar or chocolate. So I made paleo flax bread.
The idea behind paleo flax bread actually came from the book Practical Paleo which has a paleo vanilla almond sponge bread recipe. While this recipe does not contain vanilla or almond, it does have lots of flax which is a good way to sneak in some more Omega-3’s.
This bread is not sweet at all, and could really be considered more of a savory bread. It does make a great vehicle for butter, almond butter and honey to name a few.
Paleo Flax Bread (makes 4-6 squares)
3 tbsp ground flax
9 tbsp hot water
2 tbsp melted butter
1 tsp cinnamon
1 tsp salt
1/2 tsp baking soda
2 tbsp unsweetened almond milk
1/4 cup coconut flour
Preheat your oven to 350F. Grease an 8×8 baking pan with cooking spray and set aside.
Melt your butter in a small saucepan or in the microwave.
In a small bowl, mix your ground flax and hot water together. Set aside for 5 minutes or until the mixture begins to gel.
In a larger bowl mix your coconut flour, baking soda, salt and cinnamon. Add your melted butter, almond milk and eggs and continue to mix well.
Gently fold in your ground flax and continue to mix until everything is well blended.
Pour your mixture into your baking dish and place in the oven for 40 minutes.
