Protein Muffin Recipes

After posting about my Lemon Coconut Protein Muffins, I’ve been on quite the protein muffin kick.  Protein muffins are easy to make, are a perfect snack or breakfast on the go, and a nice way to sneak some extra protein into your diet.  Here are two of my current favorite protein muffin recipes.

Pumpkin Protein MuffinsThe first recipe is for pumpkin protein muffins.  Canned pumpkin is a staple in my house all year long and these muffins are the perfect snack.  I find these especially delightful when topped with some peanut or almond butter.

Pumpkin Protein Muffins (makes 6 muffins)

Ingredients:

1 packet Perfect Fit Protein Powder (or 1/4 cup protein powder)

1/4 cup coconut flour

2 eggs

1 egg white

2 tbsp pumpkin

1 tsp cinnamon

1 tsp nutmeg

1/4 tsp salt

2 tbsp coconut oil, melted

1/4 tsp baking powder

Directions:

Preheat your oven to 350F.  Line 6 muffin tins with paper liners.

In a small bowl mix your protein powder, coconut flour, cinnamon, nutmeg, baking powder and salt.  Be sure to whisk your coconut flour and protein powder well to ensure there are no clumps.

Add your eggs, egg white, coconut oil and pumpkin to the dry mixture and continue to mix until well blended.  Gently spoon your batter into the muffin tins and bake for 23-25 minutes.

The other protein muffin recipe I made was for the times when my sweet tooth strikes.  Enter Cocoa Protein Muffins.

Cocoa Protein Muffins

These muffins are made with unsweetened cocoa powder and no other added sugars.  The Perfect Fit protein powder is lightly sweetened with stevia so these muffins have a nice sweet flavor to them without being too overpowering.  These are definitely the perfect snack for when the chocolate monster strikes (which for me is pretty much every day).

2 tbsp cocoa powder

These muffins might not be the prettiest things to look at, but they are packed with protein and are the perfect healthy snack on the go, which works just fine for me.
