Grain-Free Honey Peanut Butter Banana Bars

Since we are no longer planning our wedding, I’ve been spending more time in the kitchen.  After making my frozen honey peanut butter bites, I knew I wanted to make something else with the Bee’s Knees Peanut Butter.  Enter grain-free honey peanut butter banana bars.

Grain-Free Honey Peanut Butter Banana BarsWhen I was in the middle of wedding planning, a lot of our weekends were taken up with early morning appointments and a lot of the time I found myself having to make a quick breakfast to take in the car.  I am a big fan of the Paleo Breakfast Bread from Elana’s Pantry, so I decided to create my own version using Peanut Butter and Co.’s the Bee’s Knees PB.

Frozen Honey Peanut Butter Bars PB COPer usual we had a bunch of ripe bananas lying around, and since banana and peanut butter is a pretty perfect combination, I knew it would make the perfect breakfast bar.  The banana and peanut butter provide enough sweetness so these bars don’t have any added sugar, and they can be cut up and frozen for a quick breakfast or snack.

If you want to make these bars paleo, you can swap almond butter or sunflower seed butter for the PB, but I personally think they taste delicious with some honey peanut butter.

Ingredients:

1/2 cup Bee’s Knees Honey Peanut Butter

2 small ripe bananas

2 eggs

1 tsp vanilla

1/4 tsp salt

1 tsp cinnamon

Directions:

Preheat your oven to 350F.

In a food processor combine your bananas, peanut butter, eggs, vanilla, salt and cinnamon.  Mix until the batter is well blended and there are no lumps.

Pour your batter into an 8×8 baking dish lined with parchment paper and place in the oven.  Bake for 45 minutes or until batter is firm.

Paleo Breakfast Tortilla

To be honest, I had a hard time coming up with a name for the recipe in this post because it’s not exactly a tortilla, but it’s not an omelet either.  So I decided to call it a Paleo Breakfast Tortilla.

Paleo Breakfast TortillaA few months ago I posted about my paleo pumpkin pancake and was enjoying that in my breakfast rotation along with oats and smoothies.  Then I got sick, and now the mere idea of pumpkin makes my stomach turn (which is super sad because I love the stuff).  So it was time to come up with a breakfast alternative.

I’ve made these paleo tortillas a couple of times now, but I found myself enjoying them more with savory things like meat and cheese.  I wanted to see if I could create a “sweet” breakfast tortilla that I could top with fruit and nut butter.  I also didn’t want to use a lot of coconut flour because the taste can be a bit overpowering.

After a bunch of trial and error, I finally came up with a paleo breakfast tortilla that is perfect for those of you who like sweeter breakfasts.  And if you are a savory kind of person, just omit the cinnamon.

This tortilla is a bit on the eggy-side, but I found that the flax gives it a nice nutty flavor and the texture is pretty close to a tortilla, just slightly thicker.

If you are looking for a new grain-free breakfast, then definitely give this one a shot!  I love adding almond butter to my tortilla and topping with sliced banana.

Paleo Breakfast Tortilla (makes 1 serving)

Ingredients:

3 egg whites

1 tbsp ground flaxseed

1 tbsp tapioca starch

1 tsp coconut oil, melted

1 tsp ground cinnamon

1 tsp coconut flour

Directions:

Melt your coconut oil in a small saucepan and set aside.

In a small mixing bowl add your coconut flour, tapioca starch, cinnamon and flax and wisk well.  Fold in your coconut oil and egg white and continue to whisk until there are no lumps.

Paleo Breakfast Tortilla SkilletGrease a small skillet and place over medium heat.  Pour your tortilla mixture into the skillet and let it set.  This should take 3-4 minutes.

Paleo Breakfast Tortilla FlippedOnce the tortilla is set, gently flip so the other side can cook.  Cook for an additional 2-3 minutes and remove from the skillet.

Easy Cauliflower Rice

I actually meant to post this recipe a couple of weeks ago, but got distracted by things like my bachelorette party and my unfortunate bout with food poisoning.  Since I am finally able to enjoy food again, I figured it was high time I shared this easy cauliflower rice recipe.

Easy Cauliflower RiceWhile I love cauliflower mashed potatoes, they can be a little more time intensive since you have to boil your cauliflower for awhile and then puree it until the consistency is nice and smooth.  With this easy cauliflower rice recipe all you need to do is chop and grate your cauliflower, saute in a pan and then let it rest for about 10 minutes.

Easy Cauliflower Rice (inspired by Nom Nom Paleo)

Ingredients:

1 head of cauliflower, chopped

2 shallots, chopped

1 tbsp olive oil

2 tbsp coconut aminos

Salt and Pepper to taste

Directions:

Add your olive oil and shallots to a skillet and saute over low heat until the shallots are caramelized.

Rinse and chop your cauliflower into manageable pieces.  Using a box grater, grate your cauliflower so the pieces come out small like rice.  You can also do this in a food processor, but I find using a grater works just as well.

Once your cauliflower is grated, pat the pieces down with a paper towel to make sure all the excess moisture is removed.  Place your cauliflower pieces in the skillet along with your shallots.

Easy Cauliflower Rice PanAdd your coconut aminos, salt and pepper to the skillet and stir gently.  Cover your skillet for 10 minutes so the “rice” has time to fluff up.

I’ve had this rice with stir fry and with meatballs and find it a great low-carb addition to any meal!  Of course if you aren’t allergic to soy, you can swap soy sauce instead of the coconut aminos, but I personally think the coconut aminos give the cauliflower rice a nice flavor.  I also think adding some bacon fat to the rice would be an excellent idea.

Paleo Bacon Crab Cakes

I remember the first time I had crab cakes.  I was fifteen and in Baltimore, Maryland in July.  It was hot, humid and after a day of sightseeing, I was starving.  We went to a local seafood restaurant that was famous for their crab cakes and I immediately gobbled them up and briefly considered ordering more.  Since then, I haven’t been able to enjoy crab cakes in restaurants (due to the corn factor) but always find myself craving them.  So I decided to make paleo bacon crab cakes.

Paleo Bacon Crab CakesI should preface that these crab cakes were made with canned crab from Trader Joe’s, and I fully plan on recreating the recipe with fresh crab from Santa Monica Seafood very soon.  While these crab cakes may not be with freshly caught crab, they are delicious, loaded with flavor, and paleo!

This paleo bacon crab cake recipe also requires minimal ingredients and if bacon (gasp!) isn’t your thing, just feel free to omit it.  I’ve made them with turkey bacon and regular bacon and both versions were delicious.

Paleo Bacon Crab Cakes (serves 1-2)

Directions:

1 can canned crab

1 egg

1 tbsp coconut flour

2 strips cooked bacon, chopped

2 tbsp chopped green onion

Salt and pepper to taste

Olive oil, for frying

Directions:

Pour about one tablespoon of olive oil into a fry pan and place over low heat.

In a food processor, mix your egg, coconut flour, bacon and salt and pepper.  Once everything is well blended, scoop your mixture out and create small cakes.  I made a mixture of small and medium-sized crab cakes.

Paleo Bacon Crab cakes fryGently place each cake into your skillet and turn the heat up slightly.  Cook each side 3-5 minutes or until lightly browned.

Place your paleo bacon crab cakes on a plate and garnish with lemon and cabbage.  Tartar sauce or mayo goes great with this as well!

Paleo Bacon Crab Cakes PlateNote: If you want a thicker binder for your crab cakes, I would add a tablespoon of mayo, tartar sauce or mustard to make the mixture slightly thicker.  I had no problem frying mine, just be sure to be gentle when cooking your cakes!

While these crab cakes may not have been the same as the ones in Baltimore, they were still pretty delicious.  And if you are looking for a gluten-free/paleo alternative, these definitely hit the spot.
