Homemade Lentil Soup

A few years ago I went through a phase where I would buy the steamed lentils from Trader Joe’s and have them for lunch.  I would put them on top of salads and eat them cold nearly every single day.  This was great in theory, but eventually I burned out on eating cold lentils and never bought them again.  I finally decided it was time to rekindle my love for lentils, and grabbed a package during a recent Trader Joe’s trip.  Only this time, I decided to make homemade lentil soup.

I have to say, making homemade lentil soup is ridiculously easy.  The soup base requires minimal ingredients, and then you can customize with your own add ins such as potato, bacon or meatballs.  This soup also freezes well, so you can make a big batch and save some for leftovers later.  Besides, we all know homemade soup tastes better than soup from the can.

homemadelentilsoup Ingredients:

3 shallots

3 large carrots – diced

4 celery stalks

1 package Trader Joe’s steamed lentils

4 red potatoes

4 cups water

1 tablespoon olive oil

Salt and Pepper to taste

Directions:

Place a large pot over medium heat and drizzle with olive oil.  Dice your shallots and saute until golden brown.  While the shallots are cooking, chop up your celery and carrots.

Once the shallots are brown, add your carrots and celery and continue to sauté for 5-10 minutes.  Add in your lentils, water and potatoes and bring to a low boil.  Continue to simmer for 35-40 minutes while adding salt and pepper to taste.  Ladle into bowls and enjoy!

Cooking Notes:

  • This soup can be made with dried lentils as well – just soak your lentils overnight and allow an additional 5-10 minutes of cooking time.
  • Bacon goes really well with this soup
  • This soup tastes even better the second day – the flavor comes out even stronger.
