Vegan Chocolate Fudge Hearts

I made these vegan chocolate fudge hearts for Valentine’s Day and they were such a huge hit in our house that I’m already planning on making them again in the very near future.  I loved making these because the recipe was incredibly easy, and consists of lots of healthy fats.  Plus, you can whip up this vegan chocolate fudge in a jiffy and pop into the freezer.

Now I should tell you that this vegan “fudge” isn’t overly sweet since it is made with unsweetened cocoa powder, but if you want the fudge slightly sweeter feel free to add in some vegan chocolate chips or dust them with a little bit of powdered sugar.

Ingredients:

1 cup sunflower seed butter

1/3 cup melted coconut oil

1/4 cup unsweetened cocoa powder

1/3 cup maple syrup

1/2 tsp salt

1 tsp vanilla extract

Optional Add-Ins:  chocolate chips, coconut chips. dried fruit, etc.

Directions:

Melt your coconut oil in a small saucepan – the oil melts fast so you don’t need to have it on high heat.

While the oil is melting, mix your sunflower seed butter, salt, vanilla, cocoa powder and maple syrup together in a small bowl.  Pour in the melted coconut oil and continue to mix until well blended.

Pour the mixture into a small baking dish either lined with plastic or parchment paper.  Place the mixture in the freezer.

After about 30 minutes, pull your fudge out and take a heart-shaped cookie cutter (or any cookie cutter shape of choice) and press into the fudge to create small hearts.  Return fudge to the freezer for another 30 minutes or so.

Pull your vegan chocolate fudge hearts out of the freezer and enjoy!
