Mashed Sweet Potatoes for Thanksgiving and a Giveaway!

Every Thanksgiving I look forward to the delicious spread that my family puts together.  Turkey, stuffing, potatoes, you name it.  While the turkey and stuffing are quite good, one of my favorite Thanksgiving vegetable dishes are sweet potatoes (surprise, surprise).

When I was little, my grandma used to make sweet potato casserole covered with pineapple and marshmallows (so good) and had me on a sugar high for most of the evening.  As I got older and my taste buds matured a bit, I began to appreciate just how good a simple sweet potato was, especially mashed.

Since I was asked to create a Thanksgiving side dish recipe using Country Crock spread, I decided on making some delicious mashed sweet potatoes topped with dried cranberries and pecans.  The sweet potatoes came out delicious, and would be a perfect Thanksgiving side dish!

Mashed Sweet Potatoes

Ingredients:

2 sweet potatoes

1 tablespoon Country Crock Original Spread (or try their Cinnamon Spread for extra cinnamon flavor)

1 tsp cinnamon

1 tsp salt

1 tsp maple syrup

Pecans and dried cranberries for garnish

Directions:

Preheat your oven to 350F.  Rinse your sweet potatoes and pad them down with a paper towel and place in a baking dish.  Place potatoes in oven and roast for 45-50 minutes.

Once sweet potatoes are done roasting, peel the skin off and mash potatoes in a large bowl.  Add in the Country Crock spread, cinnamon, salt and maple syrup.  Mix well.

After the potatoes are mashed so there are no lumps, put the sweet potato mixture on a plate and garnish with cranberries and pecans, or any other garnish of your choice.

I have to say, the Country Crock added a nice creaminess and flavor to the potatoes.  I also like the fact that the spread has no trans fat and is free of hydrogenated oils.
