Smarty Pants Good Gummies [Giveaway]

I’ve always been a bit fussy when it comes to vitamins. I steered away from the gummy kinds because most of the time they are loaded with high fructose corn syrup which I can’t have (nor do I wish to have). But then Smarty Pants gave me the opportunity to try their Women’s Complete Gummies, and my tune has changed!

Pumpkin Spice Peanut Butter Muffins

Tap…tap…is this thing on? Apologies for the radio silence as of late. Things have been going well with work and between that, gearing up for football season and spending time with my friends and family, I haven’t had as much time to blog lately. But I had to pop in to tell you about some delicious pumpkin spice peanut butter muffins and an AWESOME giveaway.

As I’ve mentioned before, I’m a member of Peanut Butter and Co.’s Yum Squad. And I have to say, they know how to treat their Yum Squad members good. So when this beauty showed up on my doorstep, to say I was excited would be an understatement.

pumpkin spice peanut butter muffinsYes, that is PUMPKIN SPICE PEANUT BUTTER.  Peanut Butter and Co. combined two of my favorite things into one incredible jar of deliciousness. I’m also known as a serial coffee mug purchaser (it’s a problem), so getting the adorable #PSiloveyou mug was just icing on the cake.

Instead of just eating the pb straight from the jar (which by the way is totally acceptable in my book), I decided to pretend that it wasn’t 90+ degrees in SoCal and baked pumpkin spice peanut butter muffins with it.

Pumpkin Spice Peanut Butter MuffinsThe great thing about the pumpkin spice peanut butter is that it has just a hint of sweetness with a delicious pumpkin flavor.  I didn’t end up adding any extra sugar to my muffins because the sweetness was perfect.

These muffins are grain-free, dairy-free, and the perfect fall treat. Now if only the weather would cooperate…

Pumpkin Spice Peanut Butter Muffins (adapted from this recipe)

Makes 12 muffins

Ingredients:

1 cup Peanut Butter and Co.’s Pumpkin Spice PB

1/2 cup canned pumpkin

2 egg whites

1/3 cup water

1 tsp cinnamon

1 tsp ginger

1 tsp nutmeg

1/4 tsp salt

1/4 tsp baking soda

Directions:

Preheat your oven to 350F. Line a muffin tin with paper liners.

Whisk all of your ingredients together in a bowl. Gently pour your batter into the lined muffin tins.

Bake for 15 minutes, cool and enjoy!

Nakd Bars

When we were preparing for our trip to Europe last month, I made sure to pack all the snacks and paleo bars to get us through the 10 days we would be there.  But what I didn’t account for is the fact that I literally would not be able to eat anything on the flight over and that we would find ourselves in France on a National Holiday when everything was closed.  So needless to say, by the time we got to London, my trusty bag of snacks was gone.  Enter Nakd Bars.

Nakd BarsOne of the things the Englishman and I love to do when we travel is visit grocery stores.  In France, we spent a significant time in Carrefour and as soon as we arrived in London, we made a beeline for Tesco to stock up on goods for our Air BnB.  I was looking for some grain-free bars to replenish my stash and stumbled upon Nakd Bars.  Not only was the cheeky packaging great, the bars were made with minimal ingredients which is an automatic win in my book.  Plus, they had all sorts of fun flavors like Rhubarb and Custard and Cocoa Orange.

And I have to say, these bars are quite delicious!  They are lower in sugar than some of their American counterparts, and it was the perfect snack to keep me going through the remainder of our travels.  In fact, I bought a few more to get me through the flight home, and Virgin Atlantic surprised me by having a Nakd Bar in one of our snack boxes (which was much appreciated since I had just watched the Englishman eat a tasty ice cream bar an hour earlier).

Peanut Butter Goji Berry Brownies

Imagine rich cocoa powder + Peanut Butter and Co.’s Dark Chocolate Dreams baked into gooey perfection and topped with dried goji berries.  It may sound like a strange combo, but believe me, it works.  The Yum Squad was tasked to participate in a #mysteryingredient challenge in honor of National Peanut Month, and so Peanut Butter Goji Berry Brownies were born.

YumSquad-Banner-MysteryIngredient-Goji-SquareWhen I found out the dried goji berries were my mystery ingredient, I was beyond excited.  I happen to LOVE goji berries and use them in smoothies, granola, healthy cookies and even just eat them out of the bag as a snack.  I knew I wanted to do something sweet with the goji berries since they are on the tart side, and decided peanut butter brownies was the way to go.

goji berry brownies PINI made these peanut butter goji berry brownies for our family’s annual Academy Awards viewing party and they were a huge hit!  Even with my grandmother, who asked what “those red things were.”  The key to this recipe is to add the goji berries when the brownies are practically done baking and on the gooey side, otherwise they will turn brown and don’t look nearly as appetizing.

peanut butter and co and goji berriesI used Dark Chocolate Dreams as my base peanut butter for these brownies, but you could also use Smooth Operator, White Chocolate Wonderful, The Bee’s Knees or even Crunch Time for some added texture.  The possibilities are endless.

Peanut Butter Goji Berry Brownies (adapted from Martha Stewart)

Ingredients:

  • 8 tablespoons (1 stick) unsalted butter, chopped into pieces
  • 2 additional tablespoons of butter (to be used for the filling)
  • 4 oz semi-sweet chocolate chips (I used Guittard)
  • 2 tablespoons unsweetened cocoa powder
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup dark chocolate dreams peanut butter
  • 1/2 cup goji berries

Directions:

Preheat your oven to 350F.  Line an 8 inch square baking pan with either parchment paper or grease with butter.

Take your 2 tablespoons of butter, chocolate chips and peanut butter and melt in a saucepan over low heat.  Once the mixture has melted, set aside to cool

In a large mixing bowl whisk your flour, salt, baking powder, unsweetened cocoa powder and sugar together.  Add your eggs and vanilla and continue to whisk until the batter is well blended.

In a separate saucepan, melt your 8 tablespoons of butter and pour into the dry mixture.  Gently fold in your peanut butter mixture and continue to mix until the batter is nice and thick.

goji berry brownie mixPour your batter into your baking dish and place in the oven for 40 minutes.  At the 40 minute mark, sprinkle your goji berries on top and continue to bake for another 5 minutes, or until the brownies are nice and gooey in the center.

Remove from the oven and let cool before slicing into squares.  Eat and enjoy!
