Paleo Chocolate Almond Flax Cookies

I came to the startling realization that it has been far too long since I posted a cookie recipe on Sweet Potato Bites!  After the Christmas cookie extravaganza I went on a bit of a cookie detox, but I recently found myself craving cookies once again.  So I decided to do an updated version of my Power Cookie recipe, and created Paleo Chocolate Almond Flax cookies.

Paleo Chocolate Almond Flax CookiesLike my power cookies, these paleo chocolate almond flax cookies are on the healthier side, because my wedding is less than 3 months away (!) and I have a lovely dress to fit into.  With the exception of the chocolate chips, there’s no added sugar in these cookies and they are made with good things like ground flax and almond flour.  There’s also a little bit of butter in these cookies, but butter makes everything better.

Paleo Chocolate Almond Flax CookiesPaleo Chocolate Almond Flax Cookies (make 12 cookies)

Ingredients:

1 cup almond flour

1/4 cup ground flaxseed

1 egg

1/2 tsp baking powder

1/4 tsp salt

1/2 tsp vanilla

2 tsp cinnamon

1 tbsp butter, melted

1/4 cup Enjoy Life Chocolate Chips

2 tbsp water

Directions:

Preheat your oven to 350F.  Line a baking sheet with parchment paper.

Melt your tablespoon of butter over low heat and set aside.  In a mixing bowl add your almond flour, flaxseed, baking powder, salt and cinnamon and mix until there are no lumps.

Add your melted butter, egg, water and vanilla to the mixture and continue to blend.  Fold in your chocolate chips.

Spoon your mixture onto your baking sheet and flatten each cookie slightly with the palm of your hand.  The mixture will be a bit sticky so you may need to wet your hands a few times as you form each cookie.

Place in the oven and bake for 12-15 minutes or until the bottoms are lightly browned.

Remove from oven, cool, and enjoy.

Chocolate Peanut Butter Avocado Pudding

About a year ago I first posted about chocolate avocado pudding.  It was a regular in my healthy dessert rotation for a couple of months and then I somehow forgot about it.  I decided it was high time to make it again, only this time I took it up a notch and made Chocolate Peanut Butter Avocado Pudding.

Chocolate Peanut Butter Avo JarsSince I have a large jar of Dark Chocolate Dreams peanut butter from Peanut Butter and Co., I decided to incorporate the dark chocolate PB into the pudding instead of just eating it straight from the jar (not that there’s anything wrong with that).

Dark Chocolate PB SpoonIn addition to the Dark Chocolate Dreams PB, this avocado pudding has unsweetened cocoa powder, Canadian maple syrup, and light coconut milk.  A very simple recipe that’s also quite tasty and loaded with healthy fats.

This pudding is the perfect thing to whip up when you are craving something sweet, but not too sweet.  You can use regular peanut butter or almond butter in place of the Dark Chocolate Dreams, but I really think the dark chocolate pb takes it up a notch.

Chocolate Peanut Butter Avocado Pudding (makes 4 servings)

Ingredients:

2 small ripe avocados

2 tbsp Dark Chocolate Dreams peanut butter

2 tbsp unsweetened cocoa powder

2 tbsp maple syrup

1/2 cup light coconut milk

Pinch of salt

Directions:

Cut up your avocado and place in the food processor and begin to pulse.  Add your coconut milk, maple syrup, cocoa powder, salt and dark chocolate peanut butter and continue to mix until well blended.

Chocolate Peanut Butter Avocado Pudding ChipsScoop into small dishes and place in the fridge for a couple of hours so the pudding can firm up.  Garnish with chocolate chips if you so choose!

Chocolate Peanut Butter Avo PuddingI noticed by adding the peanut butter it gave the pudding a thicker texture than my previous version.  If you don’t want your pudding too thick, use just 1 tbsp of pb or use 1 cup of light coconut milk.

Homemade Peppermint Bark

After I posted my Salted Coconut Almond Chocolate Bark recipe I realized I never posted my recipe for Homemade Peppermint Bark!  So if you are still scrambling to find a dessert to bring to your Christmas gathering, this homemade peppermint bark should do the trick.  It’s easy to pull together and requires minimal ingredients.  ‘Tis the season for bark!

Homemade Peppermint Bark I’ve been making this homemade peppermint bark for my family for a few years now.  Back in the day, I would buy the pre-made peppermint bark from the store, but once I learned the bark was loaded with unsavory ingredients such as high fructose corn syrup I decided to take matters into my own hands and make my own.

And since we are on the topic of HFCS, I was pleased to find these organic candy canes at Whole Foods that are free of all preservatives and artificial flavors.  These candy canes have natural ingredients such as brown rice syrup and evaporated cane juice which makes them the perfect topping for the homemade peppermint bark.

homemade peppermint bark candy canesI personally like to make my peppermint bark with white and semi-sweet chocolate, but you can use milk or dark chocolate if you prefer.

Homemade Peppermint Bark

Homemade Peppermint Bark Ingredients:

1 bag semi-sweet chocolate chips

1 bag white chocolate chips

10 candy canes, crushed

Directions:

Melt your semi-sweet chocolate in a small saucepan or a microwave.

Spread your chocolate on a baking sheet lined with parchment paper and place in the fridge for 1 hour.

While your chocolate is hardening in the fridge, crush your candy canes.

Homemade Peppermint Bark crushed canesI broke my candy canes into large pieces and placed in a ziploc bag.  I then covered the bag with a dish towel and used a soup can to crush the candy cane into small pieces.  It may not be the most elegant way to crush candy canes but it works.

Melt your white chocolate in a small saucepan or microwave.  Pull your chocolate bark out of the fridge and spread the melted white chocolate on top of the semi-sweet layer.

Sprinkle the crushed candy cane on top of the white and semi-sweet chocolate mixture and place back in the fridge for another couple of hours to harden.

Salted Coconut Almond Chocolate Bark

Every year during the holidays I always whip up a batch of homemade peppermint bark and bring it to our family Christmas Eve dinner.  While I still intend on making another batch of peppermint bark, I wanted to try something different.  Enter Salted Coconut Almond Chocolate Bark.

Salted Coconut Almond Chocolate Bark CloseInspiration first struck when I was browsing the aisles at Trader Joe’s and stumbled upon their roasted coconut chips.  I knew I wanted to do something with the coconut chips but I wasn’t sure what yet.

When I got home I found a bag of semi-sweet chocolate chips and some roasted almonds and salted coconut almond chocolate bark was born.  One of my all-time favorite chocolate bars is Theo’s Salted Almond, so I knew I wanted to recreate something similar.  The sea salt and chocolate combo is a game changer for sure.  Just trust me.

This is the perfect holiday treat to make for friends, co-workers, or even just for yourself.  It’s that good.

Salted Coconut Almond Chocolate BarkSalted Coconut Almond Chocolate Bark

Ingredients:

1 bag semi-sweet chocolate chips

1 bag Trader Joe’s toasted coconut

1/2 cup almonds

Sea salt for sprinkling

Directions:

Melt your chocolate chips either over the stove in a saucepan or in the microwave.

Melted Chocolate ChipsGently pour your melted chocolate mixture into a large bowl and add your coconut and almonds,   Mix until well blended.

Salted Coconut Almond Chocolate BarkPour your mixture onto a baking sheet lined with parchment paper and spread evenly.  The mixture should fill most of the parchment paper.

Lightly sprinkle your bark with sea salt and place in the fridge to harden.  It should harden within 1-2 hours.
